My friend Sarah asked me to post my popcorn cake recipe, so here it is.
Popcorn cake is something that I've never seen anywhere besides a Clever family function. It's a tradition at our Thanksgiving and Christmas celebrations. Ummm, yummy. It's basically kinda like a rice krispie treat, but with popcorn instead of cereal, and with peanuts and gumdrops added in.
I hadn't planned on posting this, so I didn't take pictures before I took it to our church youth function tonight. It looks so yummy and cute, especially before it's cut. You make it in an angel food pan or something similar. It's easy and unique.
Grandma Clever's Popcorn Cake
4 qts. Popped popcorn
1 lb small gumdrops (sometimes we have to use the bigger ones and cut them. That’s pain.)
½ lb salted peanuts
½ c butter
½ c oil (my gma has ‘salad oil’…. I think that I normally use canola or something like that. Also, you can get away with not using that much - maybe between 1/4 c. to 1/2 c.)
1 lb marshmallows
Buttered angel food cake pan
Add popcorn, candy, and nuts in large bowl.
Melt oil and butter in lg saucepan. Add marshmallows. Bring to boil. Pour over popcorn mixture and mix.
Press into pan. Let cool.
I also thought I'd post another popcorn recipe. I can't take credit for this one - Kristi found this one and it's so yummy and different. The young women especially liked it! :)
Red Hot Popcorn
2 tbs veg. oil
1/2 c. unpopped popcorn
1/2 c. butter
2 tbs light corn syrup
2 (2.25 oz) packages cinnamon red hot candies
1. Pop popcorn and place in large brown bag (or large ziplock).
2. Combine the butter, corn syrup and red hots in a microwave safe bowl or saucepan. Heat, stirring occasionally until the candies have melted. Pour the hot syrup over the popped corn, and shake bag for 1 minute, until completely coated. Cool and serve.
I wish that I had a picture for you. It turns out bright red, just like the red hots, and tastes so yummy!
Another popcorn recipe for you...
Carmel Popcorn. This is not your normal crunchie carmel popcorn. It's got real, gooey carmel on top of the popcorn. We used to make this a lot growing up when 'the family' would sit down and watch a movie. SO good. SO easy.
Carmel Popcorn
1 c. popcorn (unpopped)
½ c. butter or margarine
1 c. brown sugar
1/3 c. white Karo syrup
1. Pop popcorn with an air popper. (You can also pop it in the microwave in a brown paper bag.)
Try to take out the seeds that don’t pop.
2. Mix butter, sugar, and karo into sm saucepan. Boil 2 mins and then pour over popped corn.

Thanks for posting your recipe!!! This is a fantastic idea for late night study groups. You can only eat so much plain microwave-popped popcorn before you get sick of it. I think I'm going to make it and take it to school for my study group. I'll let you know how we like it! (of course, I'll give full credit to you! They wouldn't believe me anyway if I said it was my idea!)
